Day one: complete! It was another sunny and hot day in California. We had scrambled eggs with sautéed local zucchini. I was able to eat before my wod at CrossfitBrentwood… glad I made it too! I was apart of their largest scheduled wod- pretty cool!!!
Lunch was a bit of a chore. I made Melissa Joulwans Well Fed Cookbook chicken pad thai recipe. I should have done as the cookbook advises… have a cooking wod!!! There was three separate steps and it would have really helped to have two of the three done (I should have grilled the chicken and made the sunshine sauce earlier…mental note: listen to Melissa!!!!!). I used my brand new julienee slicer and made zucchini noodles- lunch was BOMB!!!
For the afternoon I worked on some menu planning, reorganizing the kitchen, and some light grocery shopping. The best part of the afternoon was my Mayo win!! This was my second try at making the mayo from the Well Fed Cookbook. As of now, we are tied: mayo 1, JJ 1. I’m glad to get this win- it is freaking awesome! I used it to make Well Feds creamy Cucumbers as a side for dinner:
Skirt steak with Primal Blueprints Ancho Chile Cocoa Rub, Well Feds Roni’s Creamy Cucumbers and Sweet Potato Fries (cut into spears, drizzled with evoo, sprinkled with Mrs Dash then roasted on a baking sheet for 30 minutes at 450 degrees and then salted). No leftovers. Day one has been a win!
